Doc update for other packages

Some supplemental information for v-protocol, v-pool, and v-connection-string for places where we need to expose the API.

This will be followed up later by work for another logged issue to add code samples for these documentation updates as well as put all documentation code samples into test files that will be maintained under source control and ran as part of CI.
