deps: update mistral go version

Fixes: #863
Context: Following the current public documentation to get started with golangchain and Mistral results in API errors from Mistral due to stronger interface validation rejecting unused arguments sent from the client. This has been addressed in github.com/gage-technologies/mistral-go v1.1.0. Installing this version in another Go project using golangchain works as a mitigation, but it would be great to get this working out of the box again for new users.
