Remove mention of unused SOSS reference files in docs

Relates to JWSTDMS-1076

This PR removes mentions of the unused WAVEMAP and SPECTRACE reference files, which have been replaced by pastasoss. The reference files themselves are being removed as part of JWSTDMS-1076, but I don't think this documentation-only change needs to wait for that to happen.

Tasks
