Bump Loki volume size from 1G to 10G #57

We are using these CRDs in our QE automation, and 1GB fills very quickly - this should remain a good example for customers wanting to "try it out" as this size works on even very small-scale (e.g. 3 worker node) clusters

what about copy-pasting to another config file? Bc 200GB looks more than a simple & quick demo use case

@jotak it doesn't have to be 200G necessarily 😄 But it needs to be bigger than 1G - if 200G works on the small scale cluster I don't see why not keep that value but if you'd rather do something smaller feel free to suggest and I can change it

@jotak Going to need an update to the operator manifest as well I think, the docs there claim that zero-click Loki creates a 1G PVC going to need to change that to 10G
