chore(deps): bump sigs.k8s.io/gateway-api from v0.8.1 to v1.0.0

This does not require v1 resources, but does allow using them. We can deprecate v1beta1 in another release and stop using /v1beta1 entirely.

• This will not break child repos: it doesn't hardcode values (.e.g "kumahq" as a image registry) and it will work on Windows, system specific functions like syscall.Mkfifo have equivalent implementation on the other OS --
