[datadogconnector] Add contrib to list of distributions (open-telemet…

…ry#27243) **Description:** This PR adds contrib to the list of distributions for the datadogconnector (related PR: open-telemetry/opentelemetry-collector-releases#389). This PR also adds a section in the README of the processor which links to the setup instructions of the connector.
