I have data like "united states", and "united kingdom" but when I use the terms panel it will return a count of "united", "states", "kingdom", but not "united states" and "united kingdom".

How can I have the entire value/phrase counted instead of individual words?

You need to set this field as "not_analyzed" in your Elasticsearch mapping.
