[dev-docs] Fix expression string syntax (#101419) (#101432)

Because this isn't in a code block, MDX is trying to interpolate the
`{column1}` value, which is undefined.

Here is a very simple expression string:

It consists of 3 functions:

- essql which runs given sql query against elasticsearch and returns the results
- `mapColumn`, which computes a new column from existing ones;
