feat: save subset of variables #36

Note: this changes are built on top of the changes from #34, adding the type annotations for sparsity. I can remove that if you do not want to merge #34.

Allow to save a subset of the variables of the model, which can be relevant for large models, but I can understand if you prefer to keep the codebase simple.

Nice, I like it! Would you mind calling the argument var_names instead of save_subset? This way, it will correspond to other libraries using a similar mechanism, such as pymc or arviz.

mypy complained of incompatible type `**dict[str, int]`

This way, it is also robust to future refactorings of the parameter names.
