In a recent release, the enrichment APIs were changed to resolve #541 (in #566).
This PR updates the enrichment docs to match the new usage, list the available enrichment classes, and describe the properties for nested enrichments on collections/maps.
It also removes all mentions of
TypeEnrichment, which is now an interface.
