(low) Update User Story file names

The file names for each user story is currently based on a number instead of the user's name. For the sake of consistency and understanding the URL destination, we should update these files names to include the name of the user from the story.

Current wording (example): /people-use-web/user-stories-one/ is for Ade

Suggested revision (example): /people-use-web/user-stories-ade/

A bit of caution on using the names. Some might change... although I guess only when we re-do videos...

We decided to leave the numbers in case we change the names. It's in an issue or PR somewhere, but I'm not finding it quickly to point to.

I'm closing this issue, yet re-open if you want us to re-evaluate.
