Log configuration affects log output per data job

Overview

Follow-up from #2563

The configuration we added should result in the log output changing, e.g. if we omit the timestamp from the config.ini variable, it should also not be present in the data job logs.

VDK should ship with a default configuration for logging that includes most metadata fields.

Acceptance criteria

1. The configuration we pass results in the log format per job changing
2. Vdk has a default logging configuration
3. Configuration per job overrides default logging configuration
