Add Redwood to Vite ecosystem CI

What's not working?

With Vite being default in Redwood, we should add it to https://github.com/vitejs/vite-ecosystem-ci/

Suggestion:

• Add new project to https://github.com/redwoodjs/deploy-target-ci/ - so dependabot will take care of updates
• Add some playwright tests. Note that we don't need to check everything, but probably things like launching dev, build and serve
