Ensure that all fields from the JSON-RPC API specification are present

For fields that do not apply in Flow EVM, we should at least return a nil / empty / default value, so that we maintain compatibility with existing clients out there.

I double checked with the more-up-to-date docs from Infura and I haven't found a single field that we do not return. So I am closing this.
