Is your feature request related to a problem? Please describe.

As of now AIO - supports only path as DATA DIR (focusing on simplicity)

but this will bottleneck to your single storage max size.

releated Issue I have filed in other repos:
nextcloud/backup#745

Adhering to AIO focus on simplicity

Docs instructions on setting up mergerfs (like RAID (for complex data critical workloads) - virtualize filesystem combining multiple backend storages.

merged path will be set as Data DIR for AIO
