When I try using the command:
image-sdf img.png >img-sdf.sdf
on the example png (the one that is just an X) I don't get any errors but the output is not readable as a valid PNG file.

You are using it wrong. Check examples in README.md.
You need to specify output with -o flag:

$ image-sdf img.png -o img-sdf.sdf
