I'm proposing we snap a 5.6.1 release, then make a 5.x branch and merge the 6.x branch into master. This will set us up for the next major release to be 6.0 and we can start burning down remaining tasks for #1045

5.6.1 released -- any future 5.x changes for hotfixes or backports will go to the https://github.com/jupyter/nbconvert/tree/5.x branch from here on. I've changed _version.py to 6.0.0.dev in master branch and merged the 6.x branch in!
