DOCS: 5.x Logging

Problem Description

We need to update docs for 5.x

Guidelines

• Make sure any fixes from SE 4.x are forward ported to 5.x
• Initial focus is on correctness
• Record migration impact in this issue

Migration Impact

Summarize incompatibilities between Helidon 4 and Helidon 5.
Summarize actions customers must take to migrate code
OK to reference external specs or documents (for example MicroProfile specs)

There are no incorrect documents for logging, as we are missing logging documentation.
We need to fix this, though this is not a must have for 4.0 release.
