Update Playwrite default families

Super short description of the upgrade:

Assorted minor issues were identified at the initial onboarding, tracked in this issue.

The PR for these families should include:

• Single menu subset.
• Comment in the metadata to keep this remembered: # We use only the menu subset to avoid the subsetter issues identified with the PW fonts.
• The article file must be updated to link to the guide version for each family.
• The images for the Belgie models will need to be updated following Playwrite Belgie Models: Diplay name fix  #8604

@josescaglione and @davelab6 I added the line following to the Article of the first test PR to make this link between families.

It has a single-weight sibling font with Guides, Playwrite AR Guides, designed to harmonize seamlessly with this main font while providing a visual aid for primary school children.

Ok to add it as it's now to all the projects, or would you like to review the wording?
