Document data collected by the SDKs

Description

On https://docs.sentry.io/ create a page "Data Management" > "Data Collected" that lists the data that is collected by each SDK.

A pilot page is already existing in the Python SDK: https://docs.sentry.io/platforms/python/data-management/data-collected/

We already had an issue tracking it.
Closing the previous one, so we keep only this one open (and maybe reprioritize)
