Update Tekton Triggers to v0.11.1

Description

This PR updates the model for Tekton Triggers to 0.10.2. Compared to v0.8.0, a few fields were added (https://github.com/tektoncd/triggers/releases/tag/v0.10.0)

Shall we update tekton pipeline to 0.19.0 too?(Not sure whether we should do it in this PR or separate PR)

I think we need to tackle that separately. I quickly looked into it and faced an issue with duplicated fields
