Docs for Kibana and elasticsearch modules are missing config details

In the module docs, we provide an example configuration that shows how to set paths. This information is missing from the module docs for Kibana and Elasticsearch. This info needs to be added before we release the module.

Also, the kibana module docs need to set the fileset attribute so the attribute reference resolves correctly to the fileset name.

The shared info has been added to the docs for master and 6.4.

I also created a PR to fix the appearance of fileset. It wasn't actually an asciidoc attribute. Should have been changed to log when the original file was created. Fixed in #7949.
