Blockchain sync documentation updates

Proposal

Update docs, explain how to observe:

• blockchain sync progress
• state sync progress
• see if the blockchain sync is using a snapshot (/snapshot package)
• check if everything is ok (same genesis, latest block)
• how to change related log levels

Tasks:

• update docs
• update default log level in config: blockchain:info and revisit what we log there.

What do you think about changing default log and setting blockchain:info?

We do have docs on tendermint docs, and it might be better to just link to the state sync docs on tendermint.

The one thing that may make sense is adding documentation about what to add on the SDK side (where you register pruning settings, you hsould also register state sync info).
