[FEAT] - Metrics for Greenhouse Controllers

Description

As a Greenhouse Operator I would like to have domain specific metrics for the individual controllers, so that I can use the metrics to debug issues.

There is a set of Kubebuilder Performance Metrics exposed for each controller see https://book.kubebuilder.io/reference/metrics-reference. As part of this PR there should be metrics created for the individual Greenhouse Controllers

• DexController / DexAPI Expose additional HTTP metrics dexidp/dex#3698

Acceptance Criteria

• Each controller exposes CRD specific metrics (where applicable) that help to understand it's overall health.
• Metrics are collected by Prometheus
