<li>Heavy cream, 1 pint/500 mL
<li>Egg yolks, 4
<li>Sugar, 3 tbsp
<li>Vanilla, 1 tsp
<li>Salt, 1 pinch
<li>Chopped dark chocolate, 7 oz/200 g

<h2>Directions</h2>
<ol>
<li>Heat 3/4 cup cream in one-quart heavy saucepan until hot
<li>Whisk together yolks, sugar, and salt in metal bowl
<li>Add hot cream into metal bown while whisking
<li>Transfer mixture to saucepan
<li>Heat until 160°F/70°C using moderately low heat, stirring constantly
<li>Pour custardthrough fine-mesh sieve into bown and stir in vanilla
<li>Melt chocolate in microwave
<li>Mix chocolate with custard
<li>Beat remaining 1 1/4 cups cream in bowl with electric mixer until it just
holds stiff peaks
<li>Whisk one-fourth of cream into chocolate custard to lighten, then fold in
remaining cream gently but thoroughly
<li>Spoon mousse into 8 gasses or ramekins and chill, covered, at least 6
hours. Let stand at room temperature about 20 minutes before serving.
