Full API endpoint testing solution (Postman Collection / ThunderClient Collection)

We currently do not have one standard set of api endpoints setup with test data for local testing.
Ideally this would be held within version control.

We currently use Postman for testing, however looking at ThunderClient, we can version control the entries.
