also as @zklaus mentions in the Discussion point, we should wait a bit until most all our deps have started supporting it 👍

a bit of a roadblock - for now iris will be pinned against python<3.11 because of the netCDF4=1.6.1 festering sore conda-forge/iris-feedstock#86 (comment)
