doc: Add more references to Meroxa (Conduit Platform)

It is reasonable for our documentation to focus on Conduit and explain its various features. However, we should highlight Meroxa (Conduit Platform) more prominently.

At a minimum, when introducing Conduit, we should mention that it is currently used in production by large enterprises. Additionally, we should provide guidance on how to bring Conduit to production using the Conduit platform.
