Update service list to reflect production

We need to refresh the list of services to reflect our current environment.

I see some legacy item(s) and missing ones (ex, errata).

We might also be able/need to re-organize this if it makes sense (ex, sub-categories under Mirror Service to break down the components).

Anyone can grab this, however you will want to contact the Infrastructure team/channel for help :)
