So there seems to be more than one issue with the AI of Amphitheres.
Wild ones don't seem to stay near Villages, if they fly over one. (Chased several over a village, all just flew past it.)

Wild Amphitheres seem to avoid players at incredible distances, making very difficult, if not impossible (in some cases) to shoot one down out of the sky. (In most cases, other methods of flight are needed first, to even have a chance of taking one down.)
The latter is likely intended, but incase it isn't (Which seems not to have been the case in past versions, like 1.16.5, as then you at least stood a chance to shoot one without the need of flight.), then something is probably going wrong.

When finally shot down, the Ampithere will not remain on the general ground where it falls, but instead, it flies up almost immediatelly and great speeds and doesn;t allow the player to even get near it.
The only real chance one has at trying to tame one, is when its AI is occupied with targeting something else entirely.
This makes taming Ampitheres incredibly unreliable, and while I appreciate a good challange of the mind to try and come up with other methods of taming one, ideally this would be done without the needed involvement of other mods.

So I think their AI might need some touching upon, but what the issue itself is unfortunately I have no real idea of, as I'm no coder.
I've provided both the regular log, as well as the debug log for any potentially useful information held within them, but at first glance, I don't directly see any clear issue documented within the two files.

I'm still heavly testing the recent Beta release for 1.19.2, and more bugs may be found which I'll properly document in the issue tracker.
So far the most major issues I've found are: #5122 , and this one.
Thank you for development so far! World generation is already significantly better than past versions.
