Projects - Replace project metadata files with embed fields

As suggested in the discord, if we use embeds for the project management posts, we can reference the project parameters as embed fields rather than carrying around project metadata JSON files.

Although not theoretically as powerful/flexible, it should be plenty for our use case and will be a much cleaner solution aesthetically.
