According to semver, this would be a Major update, so the new fonts should be released as 3.000

Super short description of the upgrade:

This update would cover the fourth step originally planned for the fonts update.

Step 4. Release new families with Optical Size axes
Add Big Shoulders, Big Shoulders Stencil, and Big Shoulders Stencil with wght and opsz axes.

@davelab6 Just to confirm: Updating the 3 Big Shoulders with an opsz axis would mean to create 3 new families and sunset the existing * Text and * Display families.
