I understand there is acrylic but I’m not understanding the layering of copper and acrylic and led space. Is there an assembled 3D printed version to see? I was trying to see it on the YouTube videos but couldn’t see much

I think it's recommended to apply the copper tape on the underside of the keys. Capacitive sensing doesn't need direct contact with the copper tape so it should be fine. Here's a picture taken from bluemoonmystic's unofficial guide:
